The very talented culinary team headed by Chef Roziro Mathias, Executive Chef and Chef Dammika Herath, Executive Pastry Chef participated in the Chefs Table competition held at The Hotel Show, Dubai World Trade Centre. The Chefs and the service team presented a 5-course set menu along with two exciting beverages and a coffee creation. The culinary team of Majid Al Futtaim-Accor Properties went on to win the gold medal at the prestigious contest. The service team too was recognized with certificates, awards and gold medal for their excellent service.
Chef Roziro Mathias and his team of chefs curated a special menu of three canapés – Turkey mince croquettes fried to golden perfection and served with a tangy tamarind chutney, beef brisket, baby jackfruit, and umami wild mushrooms in choux buns and cream cheese, chives, blueberry glaze on blinis. For the starters they served an apple, celery, melon, jelly, seabass roulade, confit salmon with poached rock melons, orange glaze and beluga caviar. In the soup they had the heirloom tomato cappuccino, matched with basilico – a drizzle of basil oil, a foam made of rocket leaves, kalamata olive dust and parmesan tuiles. For the mains, they served an angus tri-tip, beef brisket, red cabbage, pepper, wild mushrooms, potato pave, enhanced with the sweetness of caramelized shallot, served with crispy roasted broccolini, an edamame puree and fresh black truffle. For the dessert the menu had a Valrhona Gran Couva Chocolate 64% (founded 25 years ago) mousse, presented with a yuzu cremeux, a refreshing mango basil compote, passion custard, salted caramel jelly, yoghurt, lime sorbet and finessed with strawberry caviar.
Complimenting the menu, the mixologist presented two exciting beverages – A Dilmah Celebration Pekoe Ice Tea. In honor of 25 years of hospitality at Pullman Dubai Creek City Centre, Dilmah tea introduced an exclusive Celebration Pekoe Tea, with flavor notes of almond, saffron and honey. Taking this as the main ingredient, the mixologist Valerii Bombizov prepared this concoction and the Violet Queen.
