Moonrise’s Latest Menu Refresh Shines with Chef Solemann Haddad’s Brilliance

After a year of successes and acclaim, Chef Solemann Haddad and team invite diners to explore an innovative menu featuring exciting new creations alongside cherished signatures from Moonrise!

Moonrise, the acclaimed 12-seater chef’s table located in Dubai’s vibrant Satwa district, proudly announces the launch of its highly anticipated new 12-course menu. Renowned for its innovative fusion of Middle Eastern and Japanese flavors, Moonrise continues to redefine Dubai’s dining scene with a menu that captures both culinary brilliance and nostalgic echoes of 90s Dubai. Under the masterful direction of Chef Solemann Haddad, Moonrise offers a gastronomic journey that seamlessly blends cultural influences with extraordinary craftsmanship, presenting an unparalleled dining experience.

Innovative New Dishes: A Symphony of Flavors

The newly curated menu at Moonrise introduces a series of exceptional dishes, each reflecting Chef Haddad’s unique vision of ‘Dubai Cuisine’. The highlight of the menu includes the Market Prawns — a luxurious plate featuring Gambero Rosso (red Sicilian prawns) paired with Toum-Ranch, Pedro Ximenez, and Dill. This dish takes diners on a sensory journey reminiscent of a traditional fish market, combining the creamy and delicate textures of the prawns with Chef’s innovative take on regional toum sauce.

Another standout dish is Roots, which showcases locally grown tomatoes and zaatar prepared by Leila, Moonrise’s accountant’s mother from Safita, Syria. This dish is enhanced by one of Chef Solemann’s signature techniques, ‘violent acidity,’ which adds a distinctive sharpness to the dish.

Elevated Classics and Fresh Takes

The menu also features a refined version of Sarookh & Turbot, where Sarookh Beurre Blanc is paired with Aged Galician Turbot, Smoked Herbs, and Asparagus. This dish upgrades Chef Solemann’s beloved sauce, pairing it with expertly cooked turbot for a refined and flavorful experience.

In contrast, Shima Aji & Tomato combines Aged Shima Aji Sashimi with Fresh Zaatar and Tomato Leche De Tigre. This dish highlights simplicity and freshness with just seven ingredients, creating a sashimi experience that bursts with signature acidity and vibrant flavors.

The menu concludes with a refreshing pre-dessert, Muskmelon & Labnah, which features Aged Shizuoka Muskmelon, Sweet Labnah & Sidr Honey Froyo, Yuzu Gel, Olive Oil Foam, and Yoghurt Crisps. This dish harmonizes Middle Eastern and Japanese flavors, offering a luxurious and cleansing palate experience. The dining journey culminates with Mi Cuit, Chef Solemann’s sophisticated take on a ‘soufflé’ madeleine, served with a creamy white chocolate dipping sauce.

Beloved Classics Remain on the Menu

Moonrise devotees will be pleased to know that some of the restaurant’s signature dishes remain, including the renowned Explosion — foie gras puri served with date syrup, saffron, pineapple chutney, and autumn truffle — and the decadent Grilled Cheese. This beloved dish features 36-Month Aged Parmigiano-Reggiano, Black Pepper Emulsion, Hokkaido Milk Bread, Black Garlic, and Truffle, continuing to delight patrons with its rich flavors and textures.
