Orfali Bros Introduces Two New Tasting Menus: The OG 2.0 and The Voyage 2.0

Orfali Bros Dubai, ranked No. 37 on The World’s 50 Best, has launched two new tasting menus: The OG 2.0 at AED 350 and The Voyage 2.0.

Orfali Bros, currently ranked No. 37 on The World’s 50 Best Restaurants, has opened its next chapter with two new tasting menus: The OG 2.0 at AED 350 per person and The Voyage 2.0 at AED 795 per person. Both stay rooted in familiar ingredients and memories while pushing the brothers’ cooking forward, and they give you two very different ways in, depending on how far you want to travel in one sitting.

The Voyage 2.0: 13 Courses at AED 795

The Voyage 2.0 is the flagship, a 13-course experience that moves through the brothers’ Syrian roots and the ingredients and techniques they’ve picked up beyond them. Fermentation and preparations from the Orfali Bros Lab run throughout, and because the menu follows what’s in season, individual courses can change from visit to visit.

The opener sets the tone. Baklava Caviar (caviar, crème fraîche and Aleppo pistachio) builds 40 crisp, buttery baklava-style layers, then pairs them with smoked smetana and caviar, taking a familiar format somewhere new. Foie Gras Royale (duck caramel, hazelnut and truffle) reworks the classic pâté: gently grilled foie gras becomes a smoky crémeux alongside duck caramel, aged balsamic, truffle juice, roasted hazelnuts and fresh black truffle.

The menu’s habit of turning familiar things sideways shows in Egg & Basturma (basturma, koji aioli and çemen), where egg is reinterpreted through silky koji cream and smoked yolk. Mirage (strawberry, tomato, kohlrabi, snow peas and olive oil) draws on the cold spoon salads of a Syrian summer, combining a chilled broth of lacto-fermented tomatoes with tomato raisins, grilled and fresh strawberries and pickled kohlrabi.

Seafood carries the middle of the menu. King Crab (caramelized onions, brown butter, garum and crab broth) uses the ingredient from shell to meat: shoulder and legs for their delicate texture, the shells reduced into a rich broth enriched with house garum, over a caramelized onion base with buttery foam and a shallot disc brushed with onion tamari. Sea Scallop (OB hot sauce, tamari and Wagyu coppa) brings together hand-dived Norwegian scallop with the kitchen’s pepper sauce of distilled, fermented, and sun-dried peppers, scallop garum, and brown butter, finished with beef coppa.

The main continues Orfali Bros’ longstanding tradition. Kibbeh Mishwieh (Wagyu beef, bone marrow, mint and cucumber yogurt) fills a delicate bulgur shell with Wagyu and charcoal-smoked bone marrow infused with mint and Aleppo pepper, with walnuts for texture and yogurt and cucumber-peel dips on the side.

The full Voyage also includes Cream Caramel Caviar, Roots, Aleppo Street Bun, Orfali Bayaldi and O-Toro & Chutoro OB, before closing on a dessert listed simply as “one more thing…”. A fully realised vegetarian version is available.

The OG 2.0: 7 Courses at AED 350

The OG 2.0 is the shorter route, an evolution of the menu that built the restaurant’s following, at AED 350 per person. It opens with the much-loved Corn Bomb (36-month Parmigiano Reggiano, custard and huitlacoche) and the Caviar Bun (smetana and chives), then moves through Tuna Salsa Roja (fermented tomato, aji rocoto, sea fennel and onions), Roots (spicy burghul salad, Aleppo chilli paste, tomato, puffed burghul, olive oil and shiso) and Guess What? (lacto-fermented tomatoes, cucumber, purslane, sourdough and feta).

It continues with Orfali Bayaldi (smoked eggplant, makdous muhammara, tarator, walnuts and verjus) and ORF Labaniyeh (braised lamb neck, lamb bone marrow, mint, garlic butter and yogurt). Guests can finish with a dessert chosen from the display as an optional upgrade for AED 75.

OG 2.0 Add-Ons and Pairing

Three signature dishes can be added to the OG 2.0:

  • Ohh La La (foie gras, hazelnut, quince vinegar and hazelnut miso): AED 35
  • Aleppo Street Bun (sujuk, toum, pickled haskorieh peppers and beef coppa): AED 55
  • Kebab Bel Karaz (Wagyu kebab, sour cherry sauce, parsley, pine nuts and cinnamon): AED 75

A non-alcoholic pairing of three beverages from the fermentation lab is available for AED 80.
