From the moment you step through the dramatic red and maroon curtain-draped doors, you are greeted by a dining room that exudes intimacy. At the heart of this space is an elevated chef’s counter, where flames leap, spices fill the air. A place where Chef Shehab’s culinary story continues to unfold.

Savryn’s snack offerings set the stage for the bold flavors that define the restaurant’s menu. The Cono, a crispy cone filled with Somali Xawaash cream, smoked salmon, and coriander, bursts with delightful contrasts. Meanwhile, the Kuku Paka Tartlet reimagines the beloved East African curry with shrimp, sweet chili jam, and chives. For a more unexpected twist, the crispy Ostrich Sambousek delivers minced ostrich. It is perfectly paired with Kenyan mint yogurt and spicy raspberry gel. The menu offers a new take on traditional Middle Eastern flavors.

Savryn’s appetizers take diners on an exciting journey through textures and cultural influences. The Fufu Crab Croquettes combine succulent king crab with crispy yam fufu, date cream, pickled radish, and coconut-vanilla sauce, finished with caviar. Ata Din Din, meaning “fried pepper” in Yoruba, celebrates Nigerian flavors with a spicy pepper sauce. It is balanced with tuna tartare, pickled lemon gel, ginger crumbs, and caviar.

For a comforting yet innovative offering, the Golden Ribs offer braised Wagyu short ribs glazed with a rich African curry sauce. It is accompanied by coconut Zanzibar chutney and East African flatbread. It’s a soulful nod to Africa’s rich culinary heritage.

A Curated Tasting Menu for an Immersive Dining Experience

For those seeking a more immersive experience, Savryn by Chef Shehab Medhat offers a thoughtfully curated 10-course tasting menu. It is priced at AED 465 per person, inclusive of VAT. This exquisite menu takes diners on a progression of signature dishes that celebrate fire and the bold flavours of Africa and the Middle East. With just 28 seats in the dining room, Savryn provides an intimate and exclusive experience. 

Chef Shehab Medhat: A Culinary Journey

Chef Shehab Medhat’s rise to culinary stardom is a testament to his passion and relentless pursuit of excellence. Beginning his journey at just 15 years old, washing dishes in Egypt, he soon found himself in the heart of bustling kitchens across Ghana, Kenya, South Africa, and Nigeria. Each stop added layers to his craft, shaping a style that is deeply rooted in heritage but unafraid of reinvention. At 26, Chef Shehab is now at the helm of Savryn, where he reimagines the flavours of Africa and the Middle East with an innovative twist.

“I grew up on the flavours of Egypt and the Levant – dishes that fill a room with warmth before they even reach the table,” says Chef Shehab. “At Savryn, I’m taking those memories, adding inspiration from the bold, spice-driven dishes I encountered while cooking in Ghana.”
